Finding mushrooms and enjoying a meal in Ukraine's Carpathian mountains: surviving during war
by Joe Lindsley
The Wall Street Journal had a cutesy story about how Russians are having to grow their own vegetables due to Russia’s invasion of sovereign Ukraine. Forget that. What’s more interesting and important is how Ukrainians are adept at living off the land.
In the Carpathian mountains, I have established a routine of searching for one of the most nutritious things we can eat: mushrooms. A two to four hour early-morning forest search is part survival, part life-enhancement, part-meditation during the intensity of war. And the search culminates in a nourishing meal, with great people and conversation—the sort of thing we need to keep strategizing, keep fighting, keep going. Pasta made with pure Carpathian mushrooms, parmesan, and butter.
